I am Senior Lecturer in Chemical Engineering and has 20 years’ experience of researching new ways to measure, control and utilise multiphase properties in products and processes. In the food sector this often means uncovering how microstructure is created in processing through a combination of ingredient formulation and processing. Examples include work with Unilever which showed how to account for the effects of viscous heating during the flow of ice cream from freezer to packaging; utilising population balance models to understand bubble creation in bread dough mixing; or work with Mars to characterise extrusion processing of a chocolate crumb paste.
